fix: rename Projects 'status' field to 'projectStatus'

Fixes enum conflict with Payload's internal _status field.
PostgreSQL was trying to create enum_projects_status twice with different values.

Changed:
- status → projectStatus
- Added explicit label 'Project Status' for clarity
